Pofta buna!

...plum dumplings can be eaten as dessert, a meatless main dish or side dish...

...the dough is made with mashed potatoes and is rolled with a pin, rather than forming the dumplings by hand.

...I have got this recipe from my mother, it is without potatoes and the dumplings are formatted by hand.

Ingredients:

plums (pit in!), washed (14-16plums depend of size)
500ml (2cups) water
4 tablespoons oil
200g (2cup) all purpose flour
2eggs
6 tablespoons bread crumbs
50g (1/2 stick) butter
3 tablespoons sugar
1teaspoon cinnamon (or to taste!)
1teaspoon salt

Place water, and oil in a medium saucepan and bring to a full boil.
Immediately add the flour all at once and stir continuously with a wooden spoon.
Cook for a couple of minutes (not longer!!) until the mixture pulls away from the pan, forming a ball and remove from the heat.
Remove from heat and let cool a bit.
Turn the paste into a medium bowl (or the bowl of an electric mixer fitted with a paddle) and beat in the eggs, one at a time, with a wooden spoon (or the paddle).
In a frying pan melt the butter, add bread crumbs and toss until the crumbs are crunchy and medium brown. Pull aside and add sugar and cinnamon.
Take a deep pot with water add 1tsp of salt and place on the heat. Bring to boil.
Take a piece of dough (the size depends of plum size-walnut size!), flatten on your palm, place a plum and cover the fruit to your best ability. Fruit must be cover by dough, or it will come lose in the boiling process.
You can obtain, 14-16 dumpling, depend of plums size and the thickness of dough.Add one by one in the pot with boiling water, boil until they come to surface, and continue boiling for another 2-3 minutes (all together 10-12 minute!)
Remove with a spatula to drain the excess water, and immediately tumble them in the bread crumbs.
Set the on a serving platter, or you can put them in oven a little bit!
I transferred them to an oven proof plate, I put a little bit of butter on top of each dumpling, and I kept them in oven until butter was melted, not more then 10 minute!
Serve with bread crumbs and sugar mixed with cinnamon, or icing sugar.

Enjoy!
